Episode № 55 is just a casual check in since I haven't had much podcasting time. All is well, and I'm still here writing and sharing. Oh! And I'm dropping off my cornbread method so I can look it up later in the shownotes 😉

Episode № 55: Time, bikes, and cornbread

Welcome back everybody!
Lady Jupiter Podcast is the audio accompaniment to LadyJupiter.com a lifestyle blog where I write about my family’s military life, our home life, and other tiny details that I just like to share. I’m happy that you’re here with me.
In this episode I’ll share an update on our life as affected by the U.S. military, continue with a blog update, then wrap up with my most recent domestic diversion.

Today in our military-affected lives I have nothing significant to update.
Since last episode things have been busy. Too busy to record regularly, but not so hectic that we’re living off of pizza. I mean, we’re definitely enjoying pizza, but we’re able to cook most nights.

For today’s LadyJupiter.com update…
I’ve probably published some daily notes and one or two other posts? I haven’t been keeping super clear notes on that end and I just publish things when I finally finish editing them. I wrote lately about researching bike seats for kids - that one took at least six weeks from start to finish.

I’ve been mostly updating some old posts, but I think I already mentioned that to you. It’s work and effort that nobody really sees; it’s like doing your make up for dinner with your dog. They don’t care, but I sometimes do. Mostly I just want some of my old posts to have the same visual themes as the rest of the site if someone comes across an old article via Google, and that dated content is their first impression of me. I have a workflow that I like, so that’s nice.

These old posts are getting updated slightly faster now that I have a little more time to myself in the car, so I have time for unplugged focused work -but only- if I get out the door with everything I need for said unplugged work. That’s an entirely different task!

📌 So I Bought…a bicycle sidecar

And now for my most recent domestic diversion it’s really astounding how little time I have. I’ve been keeping afloat with things - we’re eating real food, wearing clean clothes, and I’m even participating in some Key Spouse things…but there are more and more days that I don’t open my laptop at all. Typically I do have time - but it’s in the form of small bursts, 30 seconds to three minutes long…maybe. So you’ll see me on Facebook plenty, and maybe Pinterest, but I can’t get anything done in the daytime that requires something as luxurious as five uninterrupted minutes.

Ugh! Speaking of - I might have to park this podcast when Kid Jupiter stops napping. Right now he generally takes a nice lazy siesta each afternoon, and that’s when I catch up on the housework because I can’t do much when he’s awake. I know that calm toddlers exist in theory, but Kid Jupiter is like a photon; calm when observed, but the moment you’re not watching him -BAM- he’s in the backyard or he’s finding a new interesting way to get blood on the couch. So I’ve learned that if he’s awake - I can ONLY watch him. For the record, I’m not complaining; I love hanging out with him all day everyday, I just wanted to explain that it’s a full-time job, so I need to dial back everything else. That sucks because I love my hobbies, and I love talking to you each week when I can, but the weeks that I have the time to chat just aren’t as frequent. So I don’t know what to expect either.

Sorry to be a bummer. Just know that I still love writing and sharing all of the things!

The next diversion will be all bike stuff again. I received the Danish sidecar that I ordered three months ago! And just last night I finished mounting the bracket and finally attached the side car to my folding bike. But then as luck would have it, I turn on my bike and I’m not getting full power. This bike especially with the side car mounted is way too heavy for pedaling without any help, but I did get to sample my new rig with the sidecar on a slight downhill in the street, it was very smooth feels very secure and I’m so excited that ive committed to this accessory.

📌 So I Bought…a bicycle sidecar

There is a fair chance that my motor is having an issue with the clutch, or the woodruff key may have slipped, I don’t know for certain, and I definitely don’t have any diagrams so I’m not going to break open my motor anytime soon. In the meanwhile I have reached out to rad power bikes via email, and I have also emailed one of the bike shops in Little Rock who’s website boast that they work on all makes and models of bikes - so hopefully we can get my RadMini ST2 back up to full working condition so that kid Jupiter can get used to his cool new ride.

And speaking of rides, I’m medium afraid that all of this super fun bike stuff isn’t going to fit in my car…but I don’t want a bigger car. Thanks to Kid Jupiter’s playdates, I actually need the 54 miles per gallon that I get right now (that’s 23 kilometers per liter). Besides, my Prius is only three years old, I want to drive it for another seven years at least. I kind of wish that Kid Jupiter could just ride up front with me, then I could fold down the backseat entirely and we’d be set - but if I do that now we’ll be violating passenger protection laws because he can’t ride in the front seat when there’s a backseat available (I have learned that The front seat passenger in Arkansas, must be at least 13 years old or minimum height of four foot nine inches tall). I can’t believe there are such specific laws regarding children in cars, but I guess that we have to be so specific as common sense becomes less common. Oh well.

But on a totally different note I want to send you off with a tiny recipe before I leave today. I’m putting this recipe into the void for future searchability, especially for my sister who asked about this. So here is my super simple recipe for pressure cooked cornbread, so you’ll need an electric pressure cooker and a container that fits inside - like a small cake pan. I like Jiffy cornbread mix, so I buy a box and mix the batter as directed; using milk and one egg. I pour the batter into my cake pan (usually lined with parchment paper for easy clean up, but you can do whatever you want), then I place the cake pan on the trivet in a cup of water. Cook on high pressure for ten minutes, and it’s done! You can definitely pop this in the oven to broil if you need a crispy brown top, but I don’t have that need. Also I usually cook this before I need it, so it’s normal for me to leave the cornbread in the warm instant pot for an hour until it’s time to eat - you know how I said earlier that I do most cooking and cleaning during nap time? This is one of my go-to side dishes that I can start when it’s convenient, then everybody (especially Kid Jupiter is excited to see it at dinner time).

What if you accidentally grabbed the Jiffy blueberry mix instead? Worry not friend - I’ve also cooked this one for the same ten minutes and had success. When I make this blueberry mix I definitely pour the batter on a layer of frozen blueberries (sometimes drizzled with honey) and I like to add a pinch of cardamom to the batter because I think it’s delicious.

And that’s it for today’s brief episode recorded in the car.
